Chicken and Mushroom Stir Fry


  • 1 large chicken breast
  • 1 carrot
  • 1 stick of celery
  • 2 medium sized mushrooms
  • 1 spring onion
  • 1/2 tablespoon of groundnut oil
  • soy sauce
  • 1/2 teaspoon of chopped garlic
  • 1 teaspoon of chilli powder
  • white pepper
  • 1 teaspoon of tomato ketchup
  • 1/2 teaspoon of sesame oil

For the marinade

  • 1 teaspoon of soy sauce
  • 1 teaspoon Chinese cooking wine
  • 1 teaspoon of sugar
  • 1 teaspoon of corn flower
  • a dash of Worcester sauce

How to cook

In a bowl, mix together all the marinade ingredients then finely chop the chicken and add to the marinade.  Cover the marinaded chicken and refrigerate for 20 minutes.

Now whilst the chicken is marinading start to prepare the rest of your ingredients.  Chop the carrot and celery into small half moons, then slice the mushrooms into thin slices and finely chop the spring onion.

Once the chicken has marinaded, heat up your wok or pan and add the groundnut oil.  Once the oil is smoking hot, add the marinaded chicken and cook for about a minute.  Once the chicken has started to colour, add in the carrot, celery and mushroom then leave to cook for a further 1-2 minutes.  Now add in the chilli powder, chopped garlic and a pinch of white pepper.  Stir in the soy sauce and tomato ketchup then leave to cook until the vegetables have started to soften.  Now stir in the sesame oil and cook another 1-2 minutes.  Finally add the chopped spring onion and remove from the heat ready to serve on a bed of rice.
