Curry chicken noodles


1 large chicken breast

1/3 tin of coconut milk

1 tablespoon of curry powder

1/2 teaspoon paprika

1 teaspoon sugar

1 teaspoon of vinegar

1 portion of egg noodles

How to make

Well this has to be one of the easiest recipes on Gym Blog, it’s a really tasty, simple dish.  First of all, boil a pan of water and add the egg noodles.  Whilst cooking, slice the chicken breast thinly.  Then get your wok or frying pan on the heat.  Wait until your pan is smoking hot then add a tablespoon or two of groundnut oil, add the sliced chicken breast to the pan then stir fry until cooked through.  Once the chicken is cooked, remove the chicken from the pan and drain off the oil.

Now add into the empty pan the 1/3 tin of coconut oil, curry powder, paprika, sugar and vinegar.  Stir it all together to create your curry flavouring and continue to cook for a couple of minutes.  Add the pre-cooked chicken back into the pan and continue to cook until some of the curry sauce has started to reduce.

By now the noodles should be cooked, drain them and add them into the pan with the chicken and curry sauce, the rest of the liquid should start to absorb into the noodles so cook for a further minute then it is ready to serve.

This serves one person but can easily be scaled upwards if more portions are required.
