Spicy Chicken Dippers, Healthy Style
OK, so this recipe is great if you are looking for a little treat without compromising your diet in the process. Plus it’s extremely simple to make and only takes a short time to prepare and cook.
1 large chicken breast
2 slices of wholemeal or brown bread
A couple of tablespoons of flower
1/2 teaspoon of Caynenne pepper
A pinch of salt and black pepper for seasoning
How to make
First of all, blend the wholemeal bread into breadcrumbs. If you don’t have a blender then you can just use a grater although this is a little trickier. Now once you have your breadcrumbs, mix in the salt and pepper for seasoning. Then stir in the Cayenne pepper, you can alter the amount to suit your tastes. Cayenne pepper is very hot and spicy!
Before the next step, preheat your grill.
Now chop your chicken up into thin strips, you don’t want big thick chunks as the chicken dippers will take longer to cook and the breadcrumbs we will be coating them may burn.
This is the step where everything needs to be ready as we will be constructing a small production line so everything runs smoothly. You will need three bowls, one with the breadcrumb mix, one with the flower and one with the beaten egg.
Take your chicken strips, coat them in the flower and now dunk each one into the beaten egg. The next step is to roll each chicken strip into the breadcrumb mix. Then place your chicken dippers under the grill and cook until golden brown.
These work great with a side salad and a small pot of your preferred dipping sauce (hence the name chicken dippers). Be careful though as many shop brought sauces are extremely high in salt and sugars.
